Cranberry and White Chocolate Cookies

I’m trying out some new cookie recipes alongside of our Christmas favorites. We love cranberries and white chocolate and this recipe sounded like a gourmet version of my classic chocolate chip cookie one so I gave it a try. They turned out great!

Cranberry and White Chocolate Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup white sugar
  • 1 egg
  • 1 tablespoon brandy
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 3/4 cup white chocolate chips
  • 1 cup dried cranberries

Instructions

  1. Preheat oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  2. In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the egg and brandy. Combine the flour and baking soda; stir into the sugar mixture. Mix in the white chocolate chips and cranberries. Drop by heaping spoonfuls onto prepared cookie sheets.
  3. Bake for 8 to 10 minutes in the preheated oven. For best results, take them out while they are still doughy. Allow cookies to cool for 1 minute on the cookie sheets before transferring to wire racks to cool completely.

      I am not a Christian and have not taken part in that gift giving for over 30 years now. :) However, I do give my friends cookies and other small homemade tokens throughout the year. In the case of this recipe, I recommend you take the cookies out of the oven while still doughy. If you wait to long they aren’t as soft and chewy. Best wishes for 2010.

    I’m not a big cookie fan, but I love dried cranberries and I love chocolate. These sound really yummy, and easy too. I’m gonna have to try ‘em. Thanks for the recipe

      Try them and don’t be afraid to fool around with the recipe. Since I made these from the basic chocolate chop recipe, I have tried adding the cranberries and white chocolate chips to the basic oatmeal cookie recipe and we liked that one even more. Have a happy and healthy 2010. :)
