Best Berry Recipes: Blueberries, Raspberries, Strawberries

Blueberries – Health Benefits
Blueberries have more to offer than just good looks and taste.

Raspberries – Health Benefits
Rich in vitamin C, folate, iron and potassium, raspberries also provide high amounts of insoluble fiber (thanks to all those little seeds) as well as respectable amounts of the soluble fiber pectin, which helps control cholesterol levels. Raspberries are a potent source of anti-oxidants.

Strawberries – Health Benefits
Strawberries not only look like a fruity heart-shaped valentine, they are filled with unusual phytonutrients that love to promote your health.

Spinach – Health Benefits
Spinach is at the top of many super food lists. The health benefits of spinach are numerous and its ability to help prevent disease is well known.

Blueberry Spinach Salad
Serves 12

Ingredients

  • 1 lb 450 grams spinach
  • 3 tbsp 45ml hazelnuts, sliced
  • 2 cups 500ml blueberries, fresh or frozen
  • ½ medium red onion, thinly sliced
  • 1 cup golden raspberries

Instructions
Trim, wash and dry spinach.
Tear spinach into bite sized pieces.
Place in salad bowl and set aside in the fridge.

Dressing

  • 1 tbsp 15ml sesame seeds
  • ¼ cup 60ml blueberry vinegar or cider vinegar
  • 2.5 tbsp 38ml olive oil
  • 3 tbsp 45ml water
  • 1 tbsp 15ml honey
  • ¼ tsp 1ml paprika
  • ¼ tsp 1ml Worcestershire sauce
  • (dash Tabasco for vegetarians)

Instructions
Trim, wash and dry spinach.
Tear spinach into bite sized pieces.
Place in salad bowl and set aside.

Serving
At serving time, pour dressing over spinach and mix well to coat leaves.
Add blueberries, red onion slices, golden raspberries and hazelnuts.
Toss just enough to mix.

Virgin Strawberry Daiquiri Recipe
Serves 1
Ingredients

  • 1 oz fresh lime juice
  • 3 oz fresh strawberries
  • 1 teaspoon sugar
  • Cracked ice

Instructions
Fill lime juice, strawberries, and sugar into a blender.
Blend until smooth.
Add the cracked ice and blend again until smooth.
Pour into a chilled cocktail glass.
Garnish with whole strawberry or mint leave.
Serve with a straw.

Strawberry Cheesecake
Serves 12
Crust

  • 1 1/2 c Graham cracker crumbs
  • 2 tb Sugar
  • 3 tb Margarine or butter; melted

Filling

  • 19 oz Cheese, cream; softened
  • 1 c Sugar
  • 2 ts Lemon peel; grated
  • 1/4 ts Vanilla
  • 3 Eggs

Glaze

  • 1 c Strawberries; mashed
  • 1 c Sugar
  • 3 tb Cornstarch
  • 1/3 c Water

Instructions
Pre-heat oven to 350 degrees F.

Crust
Stir together graham cracker crumbs and sugar. Mix in butter
thoroughly and press into a 9″ springform pan. Bake 10 minutes. Cool.
Reduce oven temperature to 300øF.

Filling
Beat cream cheese in a large mixing bowl. Gradually add
sugar, beating until fluffy. Add lemon peel and vanilla. Beat in eggs
one at a time. Pour into shell. Bake 1 hour or until center is firm.
Cool to room temperature and then spread with the strawberry glaze.
Chill 3 hours.

Glaze
Blend sugar and cornstarch together in a small saucepan. Stir
in water and strawberries. Cook, stirring constantly, until the
mixture thickens and boils. Boil and stir for 1 minute. Cool
thoroughly before spreading over cheesecake.
