Best Berry Recipes: Strawberries

berriesSucculent strawberries abound and wordpress.com bloggers are not slouches when it comes to sharing wonderful, mouth watering recipes with their readers.

Although strawberries are a wonderfully healthy, low-calorie treat when eaten plain, I look forward to strawberry season for another reason: Strawberry Shortcake!

Here’s Strawberry Shortcake from pinchmysalt

Ingredients

  • 4 C. fresh strawberries, rinsed and sliced
  • 4 - 6 T. sugar (adjust to suit your own taste) 1 ½ C. all-purpose flour
  • 1 ½ t. baking soda
  • 4 T. sugar
  • 1/3 C. butter, cut into small pieces
  • 1/2 C. cold milk
  • 1/2 t. pure vanilla extract
  • whipped cream (I prefer the real thing)

Here’s the sort of recipe:

  • A bunch of Ontario Strawberries
  • Yogurt (Pinehouse farms brand in a glass jar that I take back for deposit) peaches or other fruit, chopped
  • milk(Harmony organic in glass bottles) or juice
  • Blend it all up, save some to drink, then pour the rest into plastic Popsicle makers.
    If you are vegan, try banana instead of yogurt and almond milk or juice.

Strawberry Jam from stonehead

Today was the first day of the jam making season and what better way to start than with a large batch of strawberry jam. Our recipe is a merger and simplification of recipes from three sources, so all you need is equal parts very ripe strawberries (just picked is ideal) and sugar, plus pectin (either from concentrate or a couple of cooked down crab apples per kilogram of fruit). We used two kilograms of strawberries, two kilograms of sugar and 250g of apple pectin extract. Strawberry Rhubarb Pie from mimu

  • 3 cups rhubarb stalks cut into 1/2 inch pieces (Trim outside stringy layer of large rhubarb stalks; make sure to trim away any and discard of the leaves which are poisonous; trim ends.)
  • 1 cup strawberries, stemmed and sliced
  • 1 cup sugar
  • 3 Tablespoons of quick cooking tapioca
  • 1/4 teaspoon of salt
  • 1 teaspoon of grated orange peel
    Unbaked pastry for two-crust 9 inch pie
